Low-Carb Salisbury Steak
Ingredients
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1 pound ground beef
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can kidney beans, rinsed and drained
1 cup frozen corn
1/2 cup water
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook for 3 minutes, or until onion is translucent.
Add the ground beef and cook, stirring frequently, until the beef is no longer pink.
Stir in the chili powder, cumin, oregano, salt, and pepper and cook for 1 minute, stirring constantly.
Stir in the diced tomatoes, kidney beans, corn, and water. Bring to a boil, then reduce heat to low and simmer for 25 minutes, stirring occasionally.
Serve hot.
