Ingredients

  • 1 head of cauliflower, chopped
  • 2 medium carrots, peeled and chopped
  • 1/4 cup butter
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Directions

  1. Bring a pot of salted water to a boil. Add the cauliflower and carrots and cook for 10 minutes, or until they are tender.
  2. Drain the vegetables and transfer to a bowl. Use a potato masher or a fork to mash them until they reach a smooth consistency.
  3. In a small saucepan, melt the butter over medium heat. Add the garlic and cook for 1 minute. Add the milk and bring to a simmer.
  4. Add the butter and milk mixture to the mashed vegetables and stir to combine. Add salt and pepper to taste.
  5. Serve the mashed cauliflower and carrots warm.
