Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cajun seasoning
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can diced tomatoes
- 2 cups fish stock
- 1/2 cup white wine
- 1/4 cup Worcestershire sauce
- 1/4 cup hot sauce
- 1 pound shrimp, peeled and deveined
- 1/2 pound crabmeat
- 1/2 pound scallops
- 2 tablespoons chopped fresh parsley
Directions
- Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
- Add the cajun seasoning, paprika, thyme, oregano, bay leaf, black pepper, and cayenne pepper. Cook, stirring, for 1 minute.
- Add the tomatoes, fish stock, white wine, Worcestershire sauce, and hot sauce. Bring to a boil, reduce the heat to low, and simmer for 20 minutes.
- Add the shrimp, crabmeat, and scallops. Simmer until the seafood is cooked through, about 5 minutes more.
- Stir in the parsley and serve.
