Ingredients

  • 2 tablespoons olive oil
  • 4 tilapia fillets
  • Salt and pepper, to taste
  • 2 ripe mangoes, peeled, pitted, and diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup red onion, diced
  • 2 tablespoons lime juice
  • 1 tablespoon honey

Directions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a medium skillet over medium-high heat. Season tilapia fillets with salt and pepper and cook for 3-4 minutes per side, or until cooked through.
  3. Transfer fillets to a baking sheet and bake in preheated oven for 8-10 minutes.
  4. Meanwhile, in a medium bowl, combine mangoes, cilantro, jalapeño, red onion, lime juice, and honey. Season with salt and pepper, to taste, and mix well.
  5. Remove fillets from oven and top each with a spoonful of mango salsa. Serve warm.
