Ingredients
- 2 tablespoons olive oil
- 4 tilapia fillets
- Salt and pepper, to taste
- 2 ripe mangoes, peeled, pitted, and diced
- 2 tablespoons fresh cilantro, chopped
- 1 jalapeño pepper, seeded and minced
- 1/4 cup red onion, diced
- 2 tablespoons lime juice
- 1 tablespoon honey
Directions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a medium skillet over medium-high heat. Season tilapia fillets with salt and pepper and cook for 3-4 minutes per side, or until cooked through.
- Transfer fillets to a baking sheet and bake in preheated oven for 8-10 minutes.
- Meanwhile, in a medium bowl, combine mangoes, cilantro, jalapeño, red onion, lime juice, and honey. Season with salt and pepper, to taste, and mix well.
- Remove fillets from oven and top each with a spoonful of mango salsa. Serve warm.
