Ingredients
- 4 apples, peeled, cored and chopped
- 1 onion, chopped
- 1 clove garlic, minced
- ½ cup white vinegar
- ½ cup brown sugar
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- 1 teaspoon fresh thyme leaves, chopped
- ½ teaspoon cayenne pepper
- Salt to taste
Directions
- In a large saucepan, combine the apples, onion, garlic, vinegar, sugar, ginger, cinnamon, coriander, cumin, thyme, cayenne pepper and salt.
- Bring to a boil, reduce heat and simmer for about 20 minutes, stirring occasionally, until the apples are soft and the liquid has reduced.
- Remove from heat and let cool.
- Transfer to a food processor and pulse until you achieve your desired consistency.
- Transfer to an airtight container and store in the refrigerator for up to two weeks.
