Ingredients

  • 4 apples, peeled, cored and chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • ½ cup white vinegar
  • ½ cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • 1 teaspoon fresh thyme leaves, chopped
  • ½ teaspoon cayenne pepper
  • Salt to taste

Directions

  1. In a large saucepan, combine the apples, onion, garlic, vinegar, sugar, ginger, cinnamon, coriander, cumin, thyme, cayenne pepper and salt.
  2. Bring to a boil, reduce heat and simmer for about 20 minutes, stirring occasionally, until the apples are soft and the liquid has reduced.
  3. Remove from heat and let cool.
  4. Transfer to a food processor and pulse until you achieve your desired consistency.
  5. Transfer to an airtight container and store in the refrigerator for up to two weeks.
