In a large bowl, combine potatoes, onion, garlic powder, onion powder, paprika, salt, and pepper. Stir until all ingredients are evenly distributed.
Heat oil in a large skillet over medium heat. Add potato mixture and cook, stirring occasionally, for 10 minutes.
Line a baking sheet with parchment paper. Cut puff pastry dough into 12 equal squares. Place 1 tablespoon of the potato mixture into the center of each square. Fold the corners of the dough over the filling, pinching the edges together to form a triangle.
Place triangles on the prepared baking sheet and bake for 25-30 minutes, or until golden brown.
