Ingredients
3 eggs
1/3 cup sugar
2 teaspoons vanilla extract
2 tablespoons butter, melted
1/4 teaspoon salt
1/2 cup all-purpose flour
2 tablespoons vegetable oil
Fortune messages (optional)
Directions
Preheat the oven to 375°F (190°C).
In a large bowl, whisk together the eggs, sugar, vanilla, butter and salt until smooth.
Stir in the flour and oil until well combined.
Drop 1 tablespoon of batter onto a parchment-lined baking sheet, about 2 inches apart.
Bake for about 8 minutes, or until the cookies are golden brown.
Remove the cookies from the oven and, using a spatula, carefully lift the cookies off the parchment paper.
Gently fold the cookie in half and place it on a clean surface.
Place a fortune message in the center of the cookie, if desired, and fold the cookie in half again.
Press the edges together to seal the cookie and shape the cookie into a crescent.
Repeat with the remaining batter, re-rolling the scraps and baking again.
Allow the cookies to cool completely before serving.
Interesting Facts
Fortune cookies are believed to have originated in the early 1900s in San Francisco.
