Ingredients

  • 3 tablespoons vegetable oil
  • 1/2 cup sliced shallot
  • 2 cloves garlic, minced
  • 1/2 cup sliced red pepper
  • 1/2 cup sliced green pepper
  • 1 teaspoon dried red pepper flakes
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 1 8-ounce package pad Thai noodles
  • 3/4 cup roasted peanuts, chopped
  • 1/4 cup chopped cilantro

Directions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the shallot, garlic, red pepper, green pepper, and red pepper flakes. Cook, stirring frequently, until the vegetables are softened, about 5 minutes.
  3. Add the fish sauce, soy sauce, brown sugar, lime juice, and rice vinegar. Cook, stirring, until the sauce is thickened, about 2 minutes.
  4. Add the noodles and cook, stirring frequently, until the noodles are heated through, about 5 minutes.
  5. Stir in the peanuts and cilantro. Serve immediately.
