Ingredients

  • 2 pounds mussels, debearded and scrubbed clean
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the mussels and wine and stir to combine.
  4. Cover and cook for 5 minutes, or until the mussels have opened.
  5. Discard any mussels that have not opened.
  6. Add the parsley and oregano and season with salt and pepper, to taste.
  7. Stir to combine and cook for 1 minute more.
  8. Serve immediately.
