In a large bowl, combine the pork, onions, carrots, garlic, ginger, sesame oil, and pepper. Mix together until thoroughly combined.
Lay out the wonton wrappers on a work surface. Place 1 teaspoon of the pork mixture in the center of each wrapper. Wet the edges of the wrapper with a little water.
Fold the wrappers in half to form triangles, and press the edges together to seal.
Heat the oil in a large frying pan over medium-high heat. Fry the wontons in batches until golden brown, about 3 minutes per side.
Drain the wontons on paper towels and serve immediately with your favorite dipping sauce.
