Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat, cubed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 large carrot, chopped
  • 1 stalk celery, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 (14.5 ounce) can beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef and brown on all sides.
  3. Add the onion, garlic, carrot, and celery and cook until the vegetables are tender.
  4. Stir in the diced tomatoes, tomato paste, beef broth, Worcestershire sauce, parsley, oregano, and thyme.
  5. Bring to a boil, reduce heat, and simmer for 30 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot.
