Ingredients
- 4 chicken thighs, skin on
- 2 tablespoons olive oil
- 1 onion, finely diced
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup golden raisins
- 3 tablespoons honey
- 1/4 cup chicken broth
- 2 ripe pears, peeled, cored, and cut into cubes
- 2 tablespoons butter
Directions
- Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook until the skin is golden and crisp, about 5 minutes.
- Add the onion, garlic, ginger, cumin, paprika, cinnamon, turmeric, cayenne pepper, salt, and pepper. Cook, stirring frequently, until the vegetables are softened, about 5 minutes.
- Stir in the raisins, honey, and chicken broth. Reduce the heat to medium-low, cover the skillet, and simmer for 15 minutes.
- Add the pears to the skillet and stir to combine. Simmer, uncovered, for an additional 10 minutes, or until the pears are tender and the sauce is thickened.
- Remove the skillet from the heat and stir in the butter. Serve the tagine with cooked couscous or rice.
