Ingredients
- 1 cup dates, chopped
- 1 cup hot water
- 3/4 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, combine dates and hot water. Let stand for 10 minutes.
- In a large bowl, cream together the sugar and butter. Add the eggs one at a time, beating well with each addition. Stir in the vanilla. Add the date mixture and mix well.
- In a separate bowl, sift together the flour, baking soda and salt. Gradually add the dry ingredients to the creamed mixture and mix until just blended. Stir in the walnuts.
- Pour the batter into the prepared pan. Bake for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool before serving.
