Ingredients
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups eggnog
- 4 tablespoons butter, melted
Directions
- In a large bowl, whisk together the flour, sugar, baking powder, nutmeg, cinnamon, ginger, and salt.
- In a separate bowl, whisk together the eggs, eggnog, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and whisk until just combined.
- Heat a griddle or non-stick skillet over medium heat and lightly grease with butter.
- Scoop 1/4 cup of batter onto the griddle for each pancake. Cook for about 2 minutes or until the edges begin to look dry. Flip and cook for another 1-2 minutes.
- Serve with butter and syrup.
