  • 1 whole chicken (around 4 pounds)
  • 4 cloves of garlic, minced

  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

Directions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken, inside and out, under cold water and pat dry with paper towels.
  3. In a small bowl, mix the minced garlic, softened butter, olive oil, salt, black pepper, paprika, dried thyme, and dried rosemary to make a garlic butter mixture.
  4. Gently loosen the skin of the chicken by sliding your fingers between the skin and the meat, being careful not to tear the skin.
  5. Spread half of the garlic butter mixture under the skin of the chicken, making sure to cover as much of the meat as possible. Rub the remaining mixture all over the outside of the chicken, including the wings and legs.
  6. Place the chicken on a roasting rack inside a roasting pan, breast-side up.
  7. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Halfway through cooking, baste the chicken with the drippings and juices that accumulate at the bottom of the roasting pan. This will add extra flavor and moisture to the chicken.
  9. Once the chicken is fully cooked, remove it from the oven and let it rest for about 10 minutes to allow the juices to redistribute.
