Ingredients

  • 1 cup of plain yoghurt
  • 1/2 cup of sugar
  • 1/2 cup of butter, melted
  • 2 eggs
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 1/2 cups of all-purpose flour
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of freshly grated lemon zest

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch (20 cm) round cake pan.
  2. In a large bowl, whisk together the yoghurt, sugar, melted butter, eggs, baking powder, baking soda, and salt until smooth.
  3. Add the flour, cinnamon, and lemon zest and stir until just combined.
  4. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
