Ingredients

  • 6 large tomatoes
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped black olives
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon olive oil
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Cut the tops off the tomatoes and scoop out the insides with a spoon. Discard the insides.
  3. In a medium bowl, mix together the feta cheese, olives, parsley, mint, olive oil, oregano, salt and pepper.
  4. Stuff the tomatoes with the feta cheese mixture and place in an oven-safe baking dish.
  5. Bake in preheated oven for 30 minutes, or until the tomatoes are soft and the filling is hot.
  6. Serve warm.
