Ingredients
6 large tomatoes
1/2 cup crumbled feta cheese
1/4 cup chopped black olives
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh mint
1 tablespoon olive oil
1/4 teaspoon dried oregano
Salt and pepper to taste
Directions
Preheat the oven to 350 degrees F (175 degrees C).
Cut the tops off the tomatoes and scoop out the insides with a spoon. Discard the insides.
In a medium bowl, mix together the feta cheese, olives, parsley, mint, olive oil, oregano, salt and pepper.
Stuff the tomatoes with the feta cheese mixture and place in an oven-safe baking dish.
Bake in preheated oven for 30 minutes, or until the tomatoes are soft and the filling is hot.
Serve warm.
