Directions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin pan with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add onion, peppers, mushrooms, herbs, garlic powder, salt, and pepper. Cook, stirring often, until vegetables are tender, about 8 minutes.
