Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 cup diced bell peppers (any color)
  • 1 cup diced mushrooms
  • 1/2 teaspoon dried herbs (thyme, oregano, basil, etc.)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 large eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheese of your choice (cheddar, mozzarella, etc.)

Directions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin pan with cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Add onion, peppers, mushrooms, herbs, garlic powder, salt, and pepper. Cook, stirring often, until vegetables are tender, about 8 minutes.
