Ingredients

  • 1 ½ cups all-purpose flour

  • 1 cup pecan halves
  • 1/2 cup dark corn syrup
  • 1/2 cup packed brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs

Directions

  1. In a large mixing bowl, whisk together the flour, granulated sugar, and salt.
  2. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your hands to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Add the ice-cold water, one tablespoon at a time, and mix until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. In a medium bowl, combine the dark corn syrup, brown sugar, melted butter, vanilla extract, and salt. Mix well.
  6. Add the eggs to the syrup mixture and whisk until fully incorporated.
  7. Take the chilled dough out of the refrigerator and roll it out on a lightly floured surface to about 1/8-inch thickness.
  8. Using a round cookie cutter, cut out circles slightly larger than the openings of your mini muffin tin cups.
  9. Gently press each dough circle into a greased mini muffin tin cup, shaping it into a mini pie crust.
  10. Divide the pecan halves evenly among the prepared pie crusts.
  11. Pour the syrup and egg mixture over the pecans, filling each pie crust about 3/4 full.
  12. Bake in the preheated oven for 20-25 minutes, or until the filling has set and the crust is golden brown.
  13. Remove the mini pies from the oven and let them cool in the tin for 10 minutes.
