Ingredients
- 2 cups of dry pinto beans
- 4 cups of water
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon oregano
- Salt to taste
Directions
- Soak the pinto beans in water overnight.
- In a large pot, heat the oil over medium heat. Add the onion, bell pepper, and garlic and sauté for 3-4 minutes.
- Add the cumin, chili powder, black pepper, oregano, and salt to the pot and stir to combine.
- Add the soaked beans and water to the pot and bring to a boil.
- Reduce the heat to low and simmer for 1 hour or until the beans are tender.
- Serve hot with your favorite Mexican dish.
