Ingredients

  • 2 cups of dry pinto beans
  • 4 cups of water
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon oregano
  • Salt to taste

Directions

  1. Soak the pinto beans in water overnight.
  2. In a large pot, heat the oil over medium heat. Add the onion, bell pepper, and garlic and sauté for 3-4 minutes.
  3. Add the cumin, chili powder, black pepper, oregano, and salt to the pot and stir to combine.
  4. Add the soaked beans and water to the pot and bring to a boil.
  5. Reduce the heat to low and simmer for 1 hour or until the beans are tender.
  6. Serve hot with your favorite Mexican dish.
