Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (4.5 oz) green chiles
  • 1 cup frozen corn
  • 1/2 cup chopped onion
  • 1/3 cup chopped cilantro
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup chicken broth
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup crushed tortilla chips

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine the chicken, tomatoes, green chiles, corn, onion, cilantro, garlic powder, cumin, chili powder, oregano, salt, pepper, and chicken broth and mix until combined.
  3. Pour the mixture into a greased 9x13 inch baking dish.
  4. Sprinkle the top with the cheese and crushed tortilla chips.
  5. Bake for 25 minutes, or until the cheese is melted and bubbly.
  6. Serve hot with additional chopped cilantro, if desired.
