1/2 cup (1 stick) unsalted butter, softened and cut into pieces
2 ounces cream cheese, softened
1 teaspoon pure vanilla extract
Directions
In the bowl of a stand mixer, combine the egg whites, sugar, and salt. Place the bowl over a saucepan of simmering water, making sure the water does not touch the bottom of the bowl. Whisk the mixture constantly until the sugar is completely dissolved, about 3 minutes. Place the bowl on the stand mixer and beat with the whisk attachment until stiff peaks form, about 6 minutes.
Switch to the paddle attachment and add the butter, one piece at a time, beating until fully incorporated before adding the next piece. Add the cream cheese and beat until combined, about 2 minutes.
Add the vanilla and beat until combined, about 1 minute. The meringue buttercream is now ready to use.
