Ingredients
- 5 quarts of cold water
- 1 cup of kosher salt
- 1/2 cup of granulated sugar
- 2 tablespoons of black peppercorns
- 2 tablespoons of whole cloves
- 2 tablespoons of dried thyme
- 2 tablespoons of dried rosemary
- 1 tablespoon of dried sage
- 1 whole turkey, defrosted
Directions
- In a large stockpot, combine the cold water, salt, sugar, peppercorns, cloves, thyme, rosemary, and sage. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Simmer for 10 minutes, stirring occasionally.
- Remove the brine from the heat and allow it to cool to room temperature.
- Place the turkey in a large container or brining bag and pour the cooled brine over the turkey.
- Cover and refrigerate the turkey in the brine for 12 to 24 hours.
- Remove the turkey from the brine and discard the brine.
- Rinse the turkey, pat dry and prepare as desired.
