Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 lb. boneless, skinless chicken breasts, cubed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cumin

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion, green bell pepper, red bell pepper, zucchini, and yellow squash to the skillet and cook for 5 minutes, stirring occasionally.
  3. Add the chicken and garlic to the skillet and cook for 5 minutes, stirring occasionally.
  4. Add the thyme, salt, pepper, turmeric, ginger, and cumin and cook for 3 minutes, stirring occasionally.
  5. Serve and enjoy!
