Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 lb. boneless, skinless chicken breasts, cubed
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cumin
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion, green bell pepper, red bell pepper, zucchini, and yellow squash to the skillet and cook for 5 minutes, stirring occasionally.
- Add the chicken and garlic to the skillet and cook for 5 minutes, stirring occasionally.
- Add the thyme, salt, pepper, turmeric, ginger, and cumin and cook for 3 minutes, stirring occasionally.
