- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced

- 2 red bell peppers, chopped
- 1 14-ounce can diced tomatoes
- 1/2 cup chicken broth
- 1/2 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 2 tablespoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup pineapple chunks
- 1 pound boneless, skinless chicken thighs, cut into bite-size pieces
- 1 15-ounce can of black beans, drained and rinsed
- 1/2 cup chopped fresh cilantro
Directions
- Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, jalapeños, and red bell peppers and cook until softened, about 6 minutes.
- Add the diced tomatoes, chicken broth, oregano, cumin, cayenne, chili powder, salt, and pepper. Simmer for 10 minutes.
- Add the pineapple, chicken, and black beans. Simmer for an additional 10 minutes.
- Stir in the cilantro and serve.
