Ingredients
- 1 lb. mahi-mahi, cut into 1-inch cubes
- 1/2 cup freshly squeezed lime juice
- 1/4 cup freshly squeezed orange juice
- 1/4 cup freshly squeezed lemon juice
- 1/2 cup diced red onion
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, seeded and diced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a medium bowl, combine the mahi-mahi cubes, lime juice, orange juice, and lemon juice. Stir to combine, then cover and refrigerate for at least 1 hour.
- In a separate bowl, combine the red onion, cucumber, tomato, cilantro, jalapeno, salt, and black pepper. Stir to combine.
- When the mahi-mahi has marinated for at least 1 hour, remove from the refrigerator and add the vegetables to the bowl. Stir to combine.
- Serve the ceviche with tortilla chips or a side of toasted bread.
