Ingredients

  • 1 lb. mahi-mahi, cut into 1-inch cubes
  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomato
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, seeded and diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. In a medium bowl, combine the mahi-mahi cubes, lime juice, orange juice, and lemon juice. Stir to combine, then cover and refrigerate for at least 1 hour.
  2. In a separate bowl, combine the red onion, cucumber, tomato, cilantro, jalapeno, salt, and black pepper. Stir to combine.
  3. When the mahi-mahi has marinated for at least 1 hour, remove from the refrigerator and add the vegetables to the bowl. Stir to combine.
  4. Serve the ceviche with tortilla chips or a side of toasted bread.
