Ingredients

  • 2 tablespoons Maehaw Thai-style seasoning mix
  • 2 tablespoons olive oil
  • 1 pound boneless pork, cut into cubes
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 teaspoon ground ginger
  • 2 cups pineapple chunks
  • 1/4 cup chopped fresh cilantro

Directions

  1. In a large bowl, mix together the Maehaw Thai-style seasoning mix and olive oil.
  2. Add the pork cubes and stir until they are coated in the mixture.
  3. Heat a large skillet over medium-high heat and add the pork cubes.
  4. Cook for 5 minutes, stirring occasionally.
  5. Add the garlic and cook for another minute.
  6. Add the chicken broth and ground ginger and stir to combine.
  7. Add the pineapple chunks and stir to combine.
  8. Cover and reduce the heat to low.
  9. Simmer for 15 minutes, stirring occasionally.
  10. Remove from the heat and stir in the chopped fresh cilantro.
  11. Serve over cooked white rice.
