Ingredients

  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 3 potatoes, diced
  • 1/2 cup of frozen peas
  • 1/2 cup of canned corn
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 1 tablespoon of Italian seasoning
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of black pepper
  • 1/2 pound of cooked octopus, cut into bite-sized pieces

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrot, celery, and potatoes and cook, stirring occasionally, for 5 minutes.
  2. Add the frozen peas, canned corn, diced tomatoes, chicken broth, Italian seasoning, sea salt, and black pepper and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
  3. Add the cooked octopus and simmer for an additional 5 minutes.
  4. Serve hot and enjoy!
