Ingredients

  • 2 large zucchinis
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Directions

  1. Using a spiralizer or julienne peeler, cut the zucchinis into thin spaghetti-like strands.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the onions and garlic and sauté until fragrant and just beginning to brown, about 4 minutes.
  3. Add the zucchini noodles to the skillet and stir to combine. Season with the oregano, basil, salt, and pepper.
  4. Cook, stirring frequently, until the zucchini noodles are just tender, about 5 minutes.
  5. Sprinkle the Parmesan cheese over the noodles and stir to combine. Serve warm.
