Ingredients

  • 3 large potatoes, washed and cut into 1/2-inch cubes
  • 1/2 cup butter, melted
  • 1/2 cup onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. In a large bowl, combine all ingredients and mix until potatoes are evenly coated.
  2. Lay out a large piece of aluminum foil and place the potato mixture in the center.
  3. Fold the edges of the foil up and around the potatoes to create a packet.
  4. Place the foil packet over a campfire and cook for 15-20 minutes, flipping the packet occasionally.
  5. Carefully remove the packet from the fire and let cool for a few minutes before serving.
