Ingredients

  • 2 cups fresh corn, kernels removed from the cob
  • 1/4 cup diced red, yellow, or orange bell pepper
  • 1/4 cup diced jalapeno pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced cilantro leaves
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the corn, bell pepper, jalapeno pepper, red onion, and cilantro. Stir to combine.
  2. In a small bowl, mix together the mayonnaise, lime juice, garlic powder, onion powder, salt, and pepper. Pour over the corn mixture and stir until everything is evenly coated.
