Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2/3 cup vegetable shortening
  • 1/2 cup cold water
  • 1/2 cup strawberry jam
  • 1/2 cup blueberry jam
  • 2 tablespoons melted butter
  • 1 tablespoon water

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together the flour, salt, and baking powder.
  3. Cut in the shortening with a pastry blender or two knives until the mixture resembles coarse crumbs.
  4. Stir in the cold water until the dough comes together.
  5. On a lightly floured surface, roll out the dough to 1/8-inch thickness.
  6. Cut out 12 rectangles, each about 4-inch square.
  7. Place six of the rectangles on a parchment-lined baking sheet.
  8. Spread 1 tablespoon of strawberry jam on each of the rectangles.
  9. Top with the remaining rectangles and press down lightly to seal the edges.
  10. Mix together the melted butter and 1 tablespoon of water and brush the tops of the Pop-Tarts.
  11. Bake for 20 to 25 minutes, or until golden brown.
  12. Let cool before serving.
