Ingredients
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking powder
2/3 cup vegetable shortening
1/2 cup cold water
1/2 cup strawberry jam
1/2 cup blueberry jam
2 tablespoons melted butter
1 tablespoon water
Directions
Preheat oven to 350°F.
In a large bowl, whisk together the flour, salt, and baking powder.
Cut in the shortening with a pastry blender or two knives until the mixture resembles coarse crumbs.
Stir in the cold water until the dough comes together.
On a lightly floured surface, roll out the dough to 1/8-inch thickness.
Cut out 12 rectangles, each about 4-inch square.
Place six of the rectangles on a parchment-lined baking sheet.
Spread 1 tablespoon of strawberry jam on each of the rectangles.
Top with the remaining rectangles and press down lightly to seal the edges.
Mix together the melted butter and 1 tablespoon of water and brush the tops of the Pop-Tarts.
Bake for 20 to 25 minutes, or until golden brown.
Let cool before serving.
