Ingredients

  • 1 butternut squash, halved and seeded
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cooked spinach
  • 1/2 cup cooked ham, diced

Directions

  1. Preheat oven to 425 degrees F.
  2. Place the butternut squash halves on a baking sheet lined with parchment paper.
  3. Brush the squash halves with the olive oil.
  4. Sprinkle the garlic powder, oregano, basil, salt and pepper over the squash halves.
  5. Sprinkle the Parmesan and mozzarella cheese over the squash halves.
  6. Top with the cooked spinach and diced ham.
  7. Bake for 20 to 25 minutes, or until the cheese is melted and the squash is tender.
  8. Serve hot.
