Ingredients
- 1 cup lentils, rinsed
- 1 lb ground beef
- 1 cup white rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cups water
Directions
- In a large pot, heat the olive oil over medium-high heat. Add the onions and sauté until they are softened and lightly browned, about 5 minutes. Add the garlic and sauté until fragrant, about 1 minute.
- Add the ground beef and cook until browned, about 5 minutes. Add the cumin, paprika, coriander, turmeric, salt, and pepper. Stir to combine and cook for 1 minute.
- Add the lentils and stir to coat in the spices. Add the water and bring to a boil. Once boiling, reduce the heat to low and simmer for 15 minutes.
- After 15 minutes, add the rice and stir to combine. Increase the heat to medium-high and bring to a boil. Once boiling, reduce the heat to low and simmer for 10 minutes, or until the rice is cooked through.
- Serve the lentils with ground beef and rice warm with your favorite side dish.
