Ingredients

  • 1 cup lentils, cooked
  • 1/2 cup rolled oats
  • 1/2 medium onion, minced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup olive oil

Directions

  1. In a food processor, pulse the cooked lentils until they are coarsely chopped.
  2. Add the oats, onion, garlic, parsley, cumin, coriander, salt, and pepper to the processor and pulse until everything is combined and the mixture is thick and sticky.
  3. Form the mixture into patties, about 2 inches in diameter.
  4. Heat the oil in a large skillet over medium heat.
  5. Add the patties to the skillet and cook for 4-5 minutes per side, or until golden brown and crispy.
  6. Serve warm with your favorite side dishes.
