Ingredients

  • 4-6 boneless, skinless chicken thighs
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup finely chopped fresh spinach
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. Lay chicken thighs on a cutting board. Using a sharp knife, butterfly the chicken thighs by slicing them almost in half lengthwise, leaving one side intact. Open the chicken thighs and lay them flat.
  3. In a medium bowl, combine the mozzarella cheese, spinach, sun-dried tomatoes, Parmesan cheese, garlic, oregano, salt, and pepper. Mix until ingredients are evenly distributed.
  4. Divide the cheese mixture evenly and spread it over the butterflied chicken thighs. Roll up the chicken thighs and place them seam side down on the prepared baking sheet.
  5. Drizzle the olive oil over the chicken rolls and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
  6. Serve the chicken roll-ups with your favorite side dishes and enjoy!
