Ingredients
- 4-6 boneless, skinless chicken thighs
- 1/2 cup shredded mozzarella cheese
- 1/2 cup finely chopped fresh spinach
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Directions
- Preheat oven to 350F. Line a baking sheet with parchment paper.
- Lay chicken thighs on a cutting board. Using a sharp knife, butterfly the chicken thighs by slicing them almost in half lengthwise, leaving one side intact. Open the chicken thighs and lay them flat.
- In a medium bowl, combine the mozzarella cheese, spinach, sun-dried tomatoes, Parmesan cheese, garlic, oregano, salt, and pepper. Mix until ingredients are evenly distributed.
- Divide the cheese mixture evenly and spread it over the butterflied chicken thighs. Roll up the chicken thighs and place them seam side down on the prepared baking sheet.
- Drizzle the olive oil over the chicken rolls and bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted.
