Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon sea salt
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup freshly chopped parsley

Directions

  1. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce the heat to low. Simmer for 15 minutes, or until the quinoa is tender and the broth is absorbed.
  2. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until the onions are softened, about 3 minutes.
  3. Stir in the cooked quinoa, pepper, salt, and lemon juice. Cook for an additional 2 minutes, stirring occasionally.
  4. Remove from the heat and stir in the parsley. Serve warm.
