Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon sea salt
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup freshly chopped parsley
Directions
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce the heat to low. Simmer for 15 minutes, or until the quinoa is tender and the broth is absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until the onions are softened, about 3 minutes.
- Stir in the cooked quinoa, pepper, salt, and lemon juice. Cook for an additional 2 minutes, stirring occasionally.
- Remove from the heat and stir in the parsley. Serve warm.
