- 1/2 cup creamy peanut butter
- 1/4 cup butter, melted
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe bananas (about 2 bananas)
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Directions
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the peanut butter, melted butter, and brown sugar until well combined.
- Beat in the eggs, one at a time, then stir in the vanilla and mashed bananas.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Stir the dry ingredients into the banana mixture until just blended.
- Pour the batter into the prepared pan.
- Bake for 50 to 60 minutes, or until a toothpick inserted near the center comes out clean.
- Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
