Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup butter, melted
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 bananas)
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the peanut butter, melted butter, and brown sugar until well combined.
  3. Beat in the eggs, one at a time, then stir in the vanilla and mashed bananas.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Stir the dry ingredients into the banana mixture until just blended.
  6. Pour the batter into the prepared pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted near the center comes out clean.
