Ingredients
- 2 lbs chicken wings, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- 2 carrots, peeled and chopped
- 1 stalk celery, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups chicken broth
- 1 cup frozen peas
- 1 tablespoon chopped fresh parsley
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the chicken wings, onion, garlic, thyme, carrots, celery, salt, and pepper. Cook, stirring occasionally, until the vegetables are tender, about 8 minutes.
- Add the chicken broth and bring to a boil. Reduce the heat and simmer for 10 minutes.
- Add the frozen peas and cook until they are tender, about 5 minutes.
- Stir in the parsley and serve.
