Ingredients

  • 2 lbs chicken wings, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 2 carrots, peeled and chopped
  • 1 stalk celery, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 1 cup frozen peas
  • 1 tablespoon chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken wings, onion, garlic, thyme, carrots, celery, salt, and pepper. Cook, stirring occasionally, until the vegetables are tender, about 8 minutes.
  3. Add the chicken broth and bring to a boil. Reduce the heat and simmer for 10 minutes.
  4. Add the frozen peas and cook until they are tender, about 5 minutes.
  5. Stir in the parsley and serve.
