Ingredients
1 tablespoon olive oil
1/2 red onion, diced
1 red bell pepper, diced
1/2 lb. chicken chorizo

2 cups cooked quinoa
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Directions
Heat a large skillet over medium heat and add the olive oil.
Once the oil is hot, add the onion and bell pepper and cook for 5 minutes, stirring occasionally.
Add the chicken chorizo and cook for 5 minutes, stirring occasionally.
Add the cumin, garlic powder, and paprika and cook for 1 minute, stirring constantly.
Add the cooked quinoa and stir to combine.
Cook for 5 minutes, stirring occasionally.
Remove from heat and stir in the parsley.
Season with salt and pepper to taste.
Serve and enjoy!
