Ingredients

  • 1 tablespoon olive oil
  • 1/2 red onion, diced
  • 1 red bell pepper, diced
  • 1/2 lb. chicken chorizo
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 cups cooked quinoa
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Directions

  1. Heat a large skillet over medium heat and add the olive oil.
  2. Once the oil is hot, add the onion and bell pepper and cook for 5 minutes, stirring occasionally.
  3. Add the chicken chorizo and cook for 5 minutes, stirring occasionally.
  4. Add the cumin, garlic powder, and paprika and cook for 1 minute, stirring constantly.
  5. Add the cooked quinoa and stir to combine.
  6. Cook for 5 minutes, stirring occasionally.
  7. Remove from heat and stir in the parsley.
  8. Season with salt and pepper to taste.
  9. Serve and enjoy!
