Ingredients
- 1 tablespoon olive oil
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/2 lb. chicken chorizo
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 cups cooked quinoa
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Directions
- Heat a large skillet over medium heat and add the olive oil.
- Once the oil is hot, add the onion and bell pepper and cook for 5 minutes, stirring occasionally.
- Add the chicken chorizo and cook for 5 minutes, stirring occasionally.
- Add the cumin, garlic powder, and paprika and cook for 1 minute, stirring constantly.
- Add the cooked quinoa and stir to combine.
- Cook for 5 minutes, stirring occasionally.
- Remove from heat and stir in the parsley.
- Season with salt and pepper to taste.
- Serve and enjoy!
