Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup ricotta cheese
  • 1 large egg
  • 2 teaspoons grated lemon zest
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup slivered almonds

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, whisk together the flour, baking powder and salt.
  3. In a large bowl, beat the butter and sugar until light and fluffy.
  4. Add the ricotta cheese, egg, lemon zest and vanilla extract and beat until combined.
  5. Stir in the flour mixture until just combined.
  6. Fold in the almonds.
  7. Drop by teaspoonfuls onto a greased baking sheet.
  8. Bake for 12-15 minutes, until the edges are golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
