Ingredients

  • 1 lb andouille sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 6 cups chicken broth
  • 1/2 cup lentils, rinsed
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Directions

  1. Heat a large pot over medium heat. Add the andouille sausage and cook, stirring occasionally, until it begins to brown.
  2. Add the onion, garlic, and mushrooms and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the chicken broth, lentils, oregano, thyme, red pepper flakes, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, until the lentils are tender.
  4. Serve hot.
