Ingredients
- 1 lb andouille sausage, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 6 cups chicken broth
- 1/2 cup lentils, rinsed
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Directions
- Heat a large pot over medium heat. Add the andouille sausage and cook, stirring occasionally, until it begins to brown.
- Add the onion, garlic, and mushrooms and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the chicken broth, lentils, oregano, thyme, red pepper flakes, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, until the lentils are tender.
- Serve hot.
