Crispy Scallion Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup boiling water
  • 1/4 cup vegetable oil
  • 1/2 cup finely chopped scallions
  • Additional vegetable oil for frying

Directions

  1. In a medium bowl, combine the flour and salt.
  2. Slowly add the boiling water, stirring with a wooden spoon until a soft dough forms.
  3. Knead the dough for about 5 minutes, until it is smooth and elastic.
  4. Cover the dough with a damp cloth and let it sit for 15 minutes.
  5. Divide the dough into eight equal pieces and roll each piece into a thin circle.
  6. Brush each circle with vegetable oil and sprinkle with scallions.
  7. Stack the circles on top of each other, pressing down lightly.
  8. Roll the stack of circles into a log and cut into eight equal slices.
  9. Heat a large skillet over medium heat and add enough vegetable oil to coat the bottom of the pan.
  10. Place the slices in the skillet and cook for 2-3 minutes on each side, until golden brown and crispy.
  11. Remove the pancakes from the skillet and drain on a paper towel.
  12. Serve warm.
