2 large leeks, white and light green parts only, thinly sliced
1/4 teaspoon salt
2 cloves garlic, minced
1/4 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper
1/2 cup heavy cream
1/2 cup grated Gruyère or Swiss cheese
Directions
Preheat oven to 375°F. Grease a 9-inch pie plate with butter.
Melt the butter in a large skillet over medium heat. Add the leeks, salt, garlic, thyme, and pepper. Cook, stirring occasionally, until the leeks are softened, about 10 minutes.
Stir in the cream and half of the cheese. Simmer for 2 minutes.
Pour the leek mixture into the prepared pie plate. Sprinkle with the remaining cheese.
Bake in the preheated oven for 25 minutes, or until the cheese is melted and lightly browned.
Serve warm.
