Ingredients

  • 1/4 cup butter
  • 1/4 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 1/2 cup dry white wine
  • 2 cups half-and-half
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked lobster meat, diced
  • 3 tablespoons fresh chives, chopped
  • Salt and pepper to taste

Directions

  1. In a large saucepan, melt butter over medium heat.
  2. Add onions and garlic and cook for about 5 minutes, until softened.
  3. Add flour and stir to combine, cooking for another 2 minutes.
  4. Add chicken broth and wine, stirring constantly to combine.
  5. Bring to a boil and then reduce heat to low and simmer for about 10 minutes.
  6. Add half-and-half and stir to combine.
  7. Add nutmeg, cayenne pepper, and salt and pepper to taste.
  8. Add diced lobster and chives and simmer for an additional 10 minutes.
  9. Serve in individual bowls and garnish with additional chives if desired.
