Ingredients
- 1/4 cup butter
- 1/4 cup onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 1/2 cup dry white wine
- 2 cups half-and-half
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cayenne pepper
- 2 cups cooked lobster meat, diced
- 3 tablespoons fresh chives, chopped
- Salt and pepper to taste
Directions
- In a large saucepan, melt butter over medium heat.
- Add onions and garlic and cook for about 5 minutes, until softened.
- Add flour and stir to combine, cooking for another 2 minutes.
- Add chicken broth and wine, stirring constantly to combine.
- Bring to a boil and then reduce heat to low and simmer for about 10 minutes.
- Add half-and-half and stir to combine.
- Add nutmeg, cayenne pepper, and salt and pepper to taste.
- Add diced lobster and chives and simmer for an additional 10 minutes.
- Serve in individual bowls and garnish with additional chives if desired.
