Ingredients

  • 6 cups shredded romaine lettuce
  • 1 cup sauerkraut, drained and squeezed dry
  • 1 cup shredded Swiss cheese
  • 1 cup thinly sliced deli corned beef, chopped
  • 1/2 cup Thousand Island dressing
  • 1/4 cup chopped dill pickles
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. In a large glass bowl or trifle dish, layer half of the shredded lettuce.
  2. Spread the sauerkraut evenly over the lettuce.
  3. Sprinkle half of the Swiss cheese over the sauerkraut.
  4. Top with half of the chopped corned beef.
  5. In a small bowl, combine the Thousand Island dressing, chopped pickles, parsley, green onions, mayonnaise, Dijon mustard, sugar, salt, and black pepper. Mix well.
  6. Spread half of the dressing mixture over the corned beef in the trifle dish.
  7. Repeat the layers with the remaining lettuce, sauerkraut, Swiss cheese, corned beef, and dressing.
