Ingredients
- 4 lamb chops
- 2 tablespoons olive oil
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup mint leaves

Directions
- Preheat the oven to 350 degrees F.
- In a small bowl, mix together the oregano, garlic powder, salt, and black pepper.
- Rub the mixture onto both sides of the lamb chops.

- Add the lamb chops to the skillet and cook for 2 minutes on each side.
- Place the skillet in the oven and bake for 10 minutes.
- Meanwhile, in a small bowl, combine the mint leaves and 1/4 cup of olive oil. Mix together until well combined.
- Remove the skillet from the oven and let the lamb chops rest for 5 minutes.
- Serve the lamb chops with the mint oil.
