1/2 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes (optional)
1/2 cup sliced mushrooms
1/2 cup sliced red bell pepper
1/2 cup sliced yellow bell pepper
1/2 cup sliced zucchini
1/2 cup frozen peas, thawed
1/2 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1/4 cup freshly chopped parsley
Directions
Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, for 1 minute.
Add the chicken, oregano, basil, salt, pepper, and red pepper flakes, if using. Cook, stirring occasionally, until the chicken is cooked through, about 5 minutes.
Add the mushrooms, bell peppers, zucchini, and peas and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
Add the cream and Parmesan cheese and cook, stirring, until the sauce is thickened, about 3 minutes.
Stir in the parsley and serve.
