Ingredients

  • 1 lb. green beans, ends trimmed
  • 2 large potatoes, cut into 1/2-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Juice of 1/2 lemon

Directions

  1. Preheat oven to 425°F.
  2. In a large bowl, combine green beans, potatoes, olive oil, garlic powder, salt, and pepper.
  3. Spread the vegetables on a baking sheet and bake for 25 minutes, stirring halfway through.
  4. Remove from oven and top with lemon juice.
  5. Serve warm.
