- 1 lb. green beans, ends trimmed
- 2 large potatoes, cut into 1/2-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Juice of 1/2 lemon
Directions
- Preheat oven to 425°F.
- In a large bowl, combine green beans, potatoes, olive oil, garlic powder, salt, and pepper.
- Spread the vegetables on a baking sheet and bake for 25 minutes, stirring halfway through.
- Remove from oven and top with lemon juice.
- Serve warm.
