Ingredients

  • 1 pound string beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon lemon juice

Directions

  1. Bring a large pot of salted water to a boil. Add the string beans and blanch for 4 minutes. Drain and rinse with cold water to stop the cooking.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the garlic and cook for 1 minute, stirring frequently.
  3. Add the blanched string beans to the skillet and season with salt and pepper. Sauté for 5 minutes, stirring occasionally, until the beans are lightly browned and crisp-tender.
  4. Remove the skillet from the heat and stir in the lemon juice. Serve warm.
